I'm not asking about the rawness, but about their mindset of working or not working.
When they are 24 / 7 at a 200 KMP or 10 hours a day at a premium house, they are listed on the menu and working.

When not listed on the menu, they are typically back in Korea or LA.
If they have time off from work and stay in NY for school or vacation or whatever purpose, do they work a little on the side ? That's what I call UTR.

That's a good question... on one hand he could be insinuating that she had been fucking him raw as a UTR set up (non advertised provider/FWB arrangement) or on the other hand she was offering "extras" to certain select clients.
