You go to your banking app on your phone select interac e-transfer and enter the email address or phone number the girl gives you and the dollar amount. You can also set a password. The girl will get an email or text with a link and she clicks on it , if there is a password she would enter it and the money will be deposited into her account. There is a little less anonymity with it then cash so I prefer paying in cash.

To guarantee they get the tip most girls will ask you transfer to them when you are in the room with them, but if you are a regular and they trust you then they may not ask you to do the etransfer in the room and you can do it later.
