I agree with Trace. You are under no obligation to treat someone who makes you feel uncomfortable - we all have to deal with unpleasant folk like this in our daily lives - why should we have to put up with them in holistic therapies, too?!
If a client ever questioned the consultation process, or indeed, made me feel like a poor therapist for doing one, then that treatment would end then, and the client would be advsed to find another therapist. End of the matter. How dare someone who hasn't been through all the professional training you have say that someting you are doing is not necessary. Fine to enquire the reasons behind the consultation process - as some have said - occassionally clients who have had holistic treatments before will never have had a consultation performed before, and so will be interested to find out why you are doing one. But if that client then refuses to give proper answers to what are relevant and genuine questions, then that client can look elsewhere, as far as I'm concerned. There are plenty of "therapists" out there who will forego the consultation process - you can generally find their mobile numbers (and a handy little photo) on cards in phone boxes.
